Chicken - Chick Burgers
Recipe as follows:
1 lb of minced chicken
Dill - 1 / 4 tsp
Rosemary - 1 sprig
Thyme - 1 sprig
Mayo or Greek Yogurt
Salt and pepper to taste
In a bowl combine mayo (Greek Yogurt) with chopped rosemary, thyme, garlic (minced), dill. Salt and pepper to taste. Cool in fridge for 15 minutes.
In another bowl - add salt and pepper to taste. Combine chicken with 1/2 of dressing. Form burgers and let sit in fridge.
In a hot pan coated with EVOO - add burgers. Cook until done.
Dress bread with remaining dressing, lettuce, saute onions, and burgers.
Lemon Berry Pancakes - Gluten Free
2 tsp of baking powder
1 cup of gluten free flour
1/2 tsp salt
Zest of 1 lemon
Up to 1/4 cup of sugar or sweetener of your choice. You decide how much to add.
Mix in a bowl together!
2 tlbs of oil (try coconut oil... it will make you slap your whole house)
1 tsp of vanilla flavoring
3/4 cup of milk
Combine all wet ingredients except milk.
Add wet and dry ingredients together. Stream in milk until you get the consistency you desire.
Cook.. don't forget to have crispy edges! Lol! Hope you enjoy this recipe.
Butternut Squash Soup
Chopped Shallot (1)
1 Butternut Squash
Dash of nutmeg
Salt + Pepper to taste
4 Garlic Cloves
1 box of Vegetable Stock
1/2 tsp of butter
Slice squash in half. Season with EVOO, salt and pepper. Roast until tender in a 350 degree oven.
In boiler saute onion and garlic with EVOO until translucent. Once squash is cooked, put in boiler.
Saute for about 10 minutes. Add stock. Let it cook down until loose. Please in blender until desired consistency.
